The Drywite Young Fish Frier of the Year Award is open to fish and chip fryers aged 18 to 25 with at least six months frying experience. They must also work in a fish and chip shop with an FHRS (Food Hygiene Ratings Scheme) rating of four or equivalent in devolved nations.
The contest runs over three rounds. Ellams and the other 11 friers have already been selected by the judges based on their submitted entry forms and short videos. The next stage will involve a video call to their place of work, whereby the judges will assess each candidate in aspects like frying technique, batter and fish preparation, and control over oil temperature. Those deemed worthy enough to go through to the final round will then be visited in person at their place of work by the judges for an in-depth assessment.
